
Florence is an incredible destination that is full of things to see and do. However, there is one thing that is for sure at the top of this list of things: sampling the local cuisine. There are plenty of Florentine dishes and specialities to try and some are more exotic or interesting than others but delicious Florentine-style peas are something that you shouldn't skip over. If you are a foodie that has found a vacation rental in Florence then be sure to get your hands on these peas while you are spending time in the city.
One of the most often served vegetable dishes in Florence, especially in Spring when the peas are fresh and in season, this is actually very easily reproduced at home. So, here is a recipe for Florentine-style peas...
Ingredients:
Serves 4
400g of unshelled peas (with the shell, 1kg)
1 clove of garlic
Some pancetta or bacon
Olive oil, to cook
Salt and pepper, to season
Parsley
Method:
1. Unshell the peas, if necessary.
2. Add to a saucepan, along with the garlic, 6 tablespoons of olive oil and a pinch of salt.
3. Add a glass of cold water and cook slowly, uncovered, until the peas are cooked and the water is partially evaporated.
4. Before removing from the heat, add thin slices of the pancetta or bacon.
5. Stir in parsley, season with salt and pepper and serve.
