
Toasted bread with black sauce.

- Chicken livers 200gr
- Bologna mortadella 100gr
- 1 onion, a small carrot, a stalk of celery
- 1 garlic clove
- Parsley
- 2 leaves sage
- 1 tablespoon capers
- 2 fillets anchovies
- 1 lemon juice
- olive oil
- salt and pepper
- 2 baguettes
Preparation:

- Clean the chicken livers and cut in pieces. Chop all the vegetables, put in a saucepan with olive oil and cook in a moderate heat.
- Before these take colour add the livers and cook for 5 minutes.
- Put the mixture in a food processor until the sauce is creamy.
- Place again over a very law heat for around 5 minutes, in the meantime process the bologna and capers together, add to the sauce with the fillets of anchovies finely chopped and stir well to amalgamate all the ingredients.
- Turn off the heat and add the lemon juice and stir for a little while. Leave to cool down.
- Toast the sliced bread and spread over the sauce.
